Green Greek Olives

When ones thinks of Greek olives, the mind immediately conjures up images of Kalamata olives. But one must not dismiss or underestimate Greek green olives, fleshy and soft and with a sweet taste. These olives are of the Calcidica green olive variety, transformed utilizing the Castel Vetrano method from Sicily. Their characteristic sweetness makes them particularly loved by children and by people that suffer from hypertension. This olive can be nibbled on alone or as part of a rich starters platter. It is a wonderful table olive, and a traditional food in the whole Mediterranean basin. It is also delicious when cooked. An example is the famous “Stifado”, a Greek beef stew with tomatoes, onions and our unique Greek green olives. For those of you that prefer not to spend a lot of time in the kitchen, simply add them to a cold salad made with green beans, feta cheese and mustard sauce. However you decide to consume these olives, your palate won't be disappointed. And let us not forget that they are the perfect companion for a glass of artfully chilled white wine.
