Brown Giant Olives

When our famous Nocellara del Belice olive does not get picked whilst still green, but rather it is allowed to ripen further on the tree, then we obtain another equally intriguing olive: the Passoloni olive. This is what is considered a “giant” olive for its dimensions. Their colour in a dark violet hue tending towards black … resulting in a sultry rich brown olive. Their flavour is as intense and appetizing as their colour, and their consistency is pulpy and rich (just like its green counterpart). Being a Nocellara olive, this too is produced in its native Sicily-  a triangle of sun, sea and love for good food. They are absolutely sublime to create a rich antipasto, as well as in any tomato based sauce. These giant black olives are that kind of product that is part of traditional Mediterranean cooking, handed down from our grandmothers and rediscovered by our daughters. And given that their flavour is so unmistakable, our olives lend themselves to even the simplest of dishes. A perfect example is a side dish made from potatoes, courgettes and brown giant olives – all baked in the oven with a hint of oil, a clove of garlic and a dash of chilli peppers. Our methodology respects that of the past, and so our olives blend perfectly both with traditional recipes as well as more modern ones.
