The “Gaeta Olives”, from the Lazio region, are exquisite little olives: unique for their unusual rose-coloured hue, their soft consistency and their intense flavour. Grown between hillside and the Mediterranean, these little gems enjoy the most favourable of microclimates, a mixture of sun, sea-breeze and a tempered climate. Harvested in the winter, these bursts of gusto are brined and then pitted, for an optimal consumption. They are subsequently not only delicious, but also easy to use. The fact that they are already pitted adds to their versatility, because they can be a helpful companion to last minute meals, as well as to more lengthy preparations. Delicious on their own, they are also excellent to add to all types of sauces - but famous the world over for being the jewels of the “Puttanesca” sauce to accompany your pasta. They are delectable in salads, and one shouldn’t have to limit themselves to Italian regional cuisines just because the olives are Italian … think of throwing these black pitted olives into a Greek feta and pita salad or an Arabic salad with cucumbers. Whiz them into a blender with some cream cheese and dill for an easy dip. Infuse their flavour into a rich doughy pizza. This versatile ingredient works well with both meat and fish, in conjunction with a variety of ingredients: from tomatoes and capers to potatoes and onions.
